Farm
Saltara farm is placed on a little valley, in an uncontaminated area rich in self-vegetation and in marble stones.
“The Cussorgia” (old word that means little and close pens) is working and fruitful from 1800 and it’s the native place of one of the most important Sardinian poets: Petru Alluttu. Agriculture and rearing were based on rough grazing with a large number of goats and cattle.
Nowadays, the main breeding is wild sardinian cattle, they adapt themselves to our not so fertile environment, in fact during the drought season they feed of the endemic vegetation of the territory.
Thank to their lifestyle the final product is really savoury with a strong gallurese taste, here the pastures are slightly salted from the northwest wind and the meat acquires a peculiar flavour.
The lack of water force us to be provident with everything our territory can produce.
